Explosive flavours, but spicy

I love the fish vindaloo especially because it's so close to the original but healthier. All the flavours are here, including the spice. Which unfortunately for me is too hot most of the time. It could be toned down a little so I don't have to cut my bites with milk everytime. Although, I have found supplementing this meal with some yogurt has helped so perhaps that's something NK can include which will still be true to cuisine!
